Jack Taylor’s Dish Of The Month

Young Stone chef Jack Taylor has showed off his culinary skills at the Food and Drink Festival over the last few years, including a brilliant appearance with the Hairy Bikers in 2010. He’s going to be sharing one of his favourite recipes each month on A Little Bit of Stone. Let us know how you get on if you try the recipe!

Well, first I was a young child nervous in front of an audience, and now here I am involved with over 10 organisations and charities from Stone and the surrounding areas.

I’ll be doing a dish of the month for A Little Bit of Stone and I hope you give it a try.

So here goes, the first one, and it is a simple Mexican classic and easy for them summer lunches!

Hot Chicken Chilli Fajitas!!

You will need to make four fajitas:

  • 1 lime
  • 1 red chilli (dependent on taste)
  • 1 pepper (either colour)
  • 2 large chicken breasts
  • 4 tortilla wraps
  • 1/2 tbsp chilli powder
  • 2 cloves garlic
  • Handful of coriander
  • 4 tomatoes
  • 1 tbsp oil

How To Make:

  1. Prepare the marinade. Squeeze the lime into a bowl, add the chilli and the chilli powder, crush and add the garlic then chop and add the coriander with the oil. Stir until fully mixed. Chop the chicken into 1cm strips and add to the bowl of marinade, mix until coated and leave to marinate
  2. While marinating, prepare the other ingredients: Chop the onion, slice the Pepper and gently fry in a little oil. Add the chicken to the pan and stir so the chicken doesn’t stick! Cook until golden brown and cut open a piece of chicken. If it’s white/cream you’re ready, if not continue.
  3. Insert the tortilla wraps into the microwave for 40 secs to warm. Remove pan from heat and also remove the wraps, place a channel of the chicken mixture to the end of a wrap and roll, continue for all four.
  4. The best part of all – EAT!
