Something smells fishy! Cookery masterclass @Stone Food Festival 2018

This year’s Stone Food Festival sees the addition of a masterclass in fish filleting, and we went along to brush up our skills!

Tom Harrison, Chef Lecturer at Stafford College, lead the class, and we started off by chopping (or julienning!) or veg to make a stuffing for our finished fish, and then moved onto our first fish of the day, a haddock. Complete with head & tail, it was a daunting prospect! But Tom took us all through it step by step, with clear instructions, and even though we’d never filleted a fish before, we ended up with two pieces that looked something like a proper fillet.

For our second fish we were given a plaice, and, contrary to what we suspected, Tom told us that flat fish were actually easier to fillet. Once again Tom’s instructions were clear & easy to follow, and our fillets were finished by dipping in flour, egg, & panko breadcrumbs. Both lots of fish were packed up ready to go straight into the oven.

We’ve had a delicious evening dinner from them tonight, and we have definitely brought home new skills along with a tasty supper.
